Julie’s Vegan Pizza

If your kids are anything like mine, then there’s a good chance that pizza is one of their favourite dishes. The problem with a lot of store bought pizzas is that they can be high in fat, high in calories, and also contain additional additives and preservatives that aren’t going to do your health any favours!

My recipe for vegan pizza is a simple way to create a fresh, healthy pizza that the kids will still love – all four of mine certainly do!

The bases that I recommend are the stone-baked variety from BFree Foods. In case you didn’t catch my last blog post, I’m now a Brand Ambassador for this incredible company,! BFree Foods provide allergen-free foods so that more people can enjoy amazing tasting dishes!

To make two pizzas, you will need the following ingredients:

    • 2 BFree pizza bases
    • 1 red pepper, de-seeded and thinly sliced long-ways
    • 1 yellow pepper, de-seeded and thinly sliced long-ways
    • 10 stalks of tender-stem broccoli
    • 2 handfuls of rocket
    • 1 tin of chopped tomatoes
    • 2 heaped Tbsp of tomato paste
    • 2 white onions, thinly sliced into 1/2 moons
    • 2 tsp of paprika
    • 2 Tbsp of pine nuts
    • Olive oil
    • Agave syrup

Begin by pre-heating your oven to 200C and preparing all of your ingredients.

Take the sliced onions and fry at a medium to high heat with a splash of olive oil. Once the onions have begun to soften, which should take around five minutes, you can then add one tablespoon of agave syrup. This will allow the onions to caramelise, so leave them to do their thing for a further few minutes. After this time, you can remove them from the heat and set aside.

Next, in a food processor, whizz the tinned tomatoes with the tomato paste and one tablespoon of the agave syrup until smooth. Set this aside as you’ll be using it as your red sauce.

Place the red and yellow peppers on a baking sheet and drizzle olive oil over them. Roast in the oven for ten minutes, as they just start to get soft.

Place the broccoli in a shallow pan and cover with 2cm of water. Heat at a medium heat for just five minutes. You can then drain and remove from the heat.

Now it’s time to create your pizza!

Slather the BFree pizza base with your red sauce, top with the caramelised onions, red and yellow peppers, and the broccoli. Each pizza should then get a tablespoon of pine nuts and a sprinkle of paprika!

Cook for 10 minutes (pine nuts will be perfectly toasted) and once out of the oven, top each pizza with a handful of rocket. Enjoy!

1/2 an avocado
2 tsp. of Super Elixir Alkalising Greens
4 tbsp. of extra-virgin olive oil
60 ml of freshly squeezed orange juice
2 tsp. of apple cider vinegar
1 tsp. of lemon juice
A pinch of salt and pepper

All you have to do is combine all of the ingredients in your food processor and whizz until the dressing is smooth.

Breakfast Millet

When you want to add a greater variety of grains into your diet, millet is a fantastic choice and it makes the perfect porridge for breakfast. Millet contains a wealth of essential nutrients, including magnesium, manganese, and copper. This amazing grain is easily digestible and is considered to be an alkaline food, which is great for promoting balance in the body.

One especially beneficial fact about millet is that serotonin is naturally present, meaning this food is perfect for promoting a happy mood. Serotonin also has calming properties, making millet a good choice as a breakfast option ahead of a stressful day! Also, millet is free from gluten and doesn’t contain any allergens. This means that there is no limit to who can enjoy this grain as a staple of their diet!

Breakfast Millet2.pngTo make this breakfast dish for one to two people, you will need the following ingredients:

2 cups / 16fl oz / 450ml of water
1 cup / 70z / 200g of millet, uncooked weight
1 cup / 8fl oz / 225ml of nut milk
1/4 cup / 1oz / 25g of pumpkin seeds
A drizzle of maple syrup
A handful of your favourite berries

Breakfast Millet3.pngThe first step is to place the water in a large saucepan on a high heat and bring to the boil before adding the millet. You can then reduce the heat to low and leave to simmer for 15 minutes, remembering to stir occasionally.

The next step is to add the nut milk and continue to cook on a low heat for five minutes while stirring. After this time you can remove the pan from the heat and stir in the pumpkin seeds.

Finally, divide the millet between two servings bowls and drizzle with maple syrup. For an extra added antioxidant boost, top with your favourite berries (personally, I love blueberries with this one) and serve immediately!

Bulgar Wheat Sushi with Wasabi Ginger

I just got back from visiting the sun in Arizona and wow did I miss it! But I was fortunate to come back to London just in time for the sun to finally visit us here too! While basking in the Arizona sunshine, I was craving light meals which go hand in hand with the very light and bright days, this is where this week’s recipe was born! Here I’m going to share the recipe with you to make four rolls for yourself.

You’ll have to start out by making the vinegar wasabi liquid, or as I refer to it, the ‘tincture’! This will pickle your ginger AND season and dress your bulgar wheat.

For the Tincture:

4 tbsp of brown rice vinegar
2 tsp of coconut nectar (or raw honey)
2 tbsp of water
2 tsp of himalayan pink salt
1/2 a tsp of wasabi
2-3 inch pieces of peeled fresh ginger root

Whisk all ingredients together, leaving out the pieces of fresh ginger root, and divide in half. Set aside one half to season the cooked bulgar wheat.

bulgar_wheat_sushi_with_wasabi_ginger_grassrootsandgrains (3)You can then slice the ginger very thinly or if you have a mandolin, use it as it’s fantastic for getting clean, thin slices. Coat the sliced ginger, both sides, with salt and let sit and sweat it out for 30 minutes. After 1/2 an hour, squeeze the ginger out and then rinse under cold water. Give it another good squeeze until it is as dry as you can get it. I used paper towels to help with this so feel free to do so to really get them dry. Then, submerge and soak the sliced ginger in the ‘tincture’ and let it marinate for 15-20 minutes.

The next stage is to make the actual Bulgar Wheat Sushi, for this you’ll need the following ingredients:

1 cup of bulgar wheat
2 cups of water
1 small cucumber, sliced into 2-3 inch matchsticks
2 baby gem lettuces
4 radishes, thinly sliced (mandolin good for this too)
1 carrot, grated
1 and a 1/2 avocados, thinly sliced
4 nori sheets
Toasted sesame seeds
Pink himalayan salt to taste

Bring to the boil, reduce to simmer and then cover with a lid and cook for 15-20 minutes until all the water has been absorbed. Once cooked, transfer to a bowl and allow the bulgar wheat to cool down. When this has been achieved, add half of the ‘tincture’ that you set aside and fold into the bulgar wheat. You can then add some pink himalayan salt to taste.

While the bulgar wheat is cooking, start your slicing and dicing of the veggies so that they are ready to be rolled!

Using wet hands, spread a thin layer of bulgar wheat evenly around the the nori sheet. Make sure to leave a two inch border at the top. Next, arrange all of the vegetables, starting with the baby gem lettuce, across the centre of the bulgar wheat and sprinkle with toasted sesame seeds.

bulgar_wheat_sushi_with_wasabi_ginger_grassrootsandgrains (4)Pick up the edge of the mat closest to you and start to roll it away from you while holding the filling in. Pull the mat gently while rolling in order to get a nice firm roll. Keep rolling until you have a nice, neat and tight roll and then use a wet and very sharp knife to neatly cut the nori roll into pieces. Arrange on a pretty platter and serve with your ginger and some tamari, which is also wheat & gluten free!

The combination of vegetables in this recipe provide a massive variety of nutrients, vitamins and minerals that’ll keep you healthy while you’re filling up! The sesame seeds in particular are a great source of niacin which you may not get in abundance from many of your other food sources. Niacin helps reduce bad cholesterol levels in the blood and can also enhance certain brain functions which work to reduce anxiety and neurosis.
