Raw Carrot and Ginger Soup

I discovered this recipe on my recent trip to Thailand, where I stayed at the beautiful Amatara Resort in Phuket! When it comes to finding delicious food around the world, Thailand is surely one of the first places that comes to mind.

Although Thailand is widely considered to be the home of many tasty dishes, you might not be aware of just how much of this food is vegetarian or vegan!

This Raw Carrot and Ginger Soup involves absolutely no animal products, making it totally vegan!

The combination of carrots, celery, and ginger in this recipe make it an all-round winner for both taste and nutrition. The inclusion of the macadamia nuts not only helps to give this soup a creamy consistency, but also helps to further enhance the health-boosting properties of this dish.

Macadamia nuts are among the fattiest of all of the nuts, but the majority of this fat is made up of monounsaturated fatty acids. Fats of this variety are known to be beneficial to the cardiovascular system. Macadamia nuts are also a good source of fibre, with one ounce of these nuts containing over 2g of the good stuff!

Ready to make this dish for yourself? Let’s get started!

Ingredients:

Soup

  • 400g carrots
  • 40g celery
  • 50g fresh ginger
  • 100g macadamia nuts, soaked for 4 hours
  • 50g avocado
  • ¾ cup coconut water
  • 3 Tbsp lime juice
  • 1 tsp sea salt
  • 1 tsp white pepper

Garnish

  • 50g green mango, finely shredded
  • 1 tsp shallot
  • ½ tsp parsley
  • ½ tsp salt
  • ½ tsp black pepper

Method:

First you must blitz the carrot, celery, ginger and avocado in the food processor and then set aside. Next, blitz the soaked macadamia nuts and coconut water (with some coconut meat too if you have it to hand) until smooth. You can then mix the two bowls of ingredients together – stirring for a few moments.

You then just need a few minutes to whip up the garnish by mixing all of the garnish ingredients in a bowl.

Pour your soup into bowls and mix in the lime juice, salt and white pepper to taste. Garnish with green mango relish and you’re ready to serve!

Julie’s Vegan Pizza

If your kids are anything like mine, then there’s a good chance that pizza is one of their favourite dishes. The problem with a lot of store bought pizzas is that they can be high in fat, high in calories, and also contain additional additives and preservatives that aren’t going to do your health any favours!

My recipe for vegan pizza is a simple way to create a fresh, healthy pizza that the kids will still love – all four of mine certainly do!

The bases that I recommend are the stone-baked variety from BFree Foods. In case you didn’t catch my last blog post, I’m now a Brand Ambassador for this incredible company,! BFree Foods provide allergen-free foods so that more people can enjoy amazing tasting dishes!

To make two pizzas, you will need the following ingredients:

    • 2 BFree pizza bases
    • 1 red pepper, de-seeded and thinly sliced long-ways
    • 1 yellow pepper, de-seeded and thinly sliced long-ways
    • 10 stalks of tender-stem broccoli
    • 2 handfuls of rocket
    • 1 tin of chopped tomatoes
    • 2 heaped Tbsp of tomato paste
    • 2 white onions, thinly sliced into 1/2 moons
    • 2 tsp of paprika
    • 2 Tbsp of pine nuts
    • Olive oil
    • Agave syrup

Begin by pre-heating your oven to 200C and preparing all of your ingredients.

Take the sliced onions and fry at a medium to high heat with a splash of olive oil. Once the onions have begun to soften, which should take around five minutes, you can then add one tablespoon of agave syrup. This will allow the onions to caramelise, so leave them to do their thing for a further few minutes. After this time, you can remove them from the heat and set aside.

Next, in a food processor, whizz the tinned tomatoes with the tomato paste and one tablespoon of the agave syrup until smooth. Set this aside as you’ll be using it as your red sauce.

Place the red and yellow peppers on a baking sheet and drizzle olive oil over them. Roast in the oven for ten minutes, as they just start to get soft.

Place the broccoli in a shallow pan and cover with 2cm of water. Heat at a medium heat for just five minutes. You can then drain and remove from the heat.

Now it’s time to create your pizza!

Slather the BFree pizza base with your red sauce, top with the caramelised onions, red and yellow peppers, and the broccoli. Each pizza should then get a tablespoon of pine nuts and a sprinkle of paprika!

Cook for 10 minutes (pine nuts will be perfectly toasted) and once out of the oven, top each pizza with a handful of rocket. Enjoy!

Self-Care Sunday – Rebuilding Self-Esteem

The latest topic in my Self-Care Sunday series is all about Rebuilding Self-Esteem and Becoming More Optimistic.

This can be a difficult topic for many people – myself included. It is often something that we try not to think about because it can be a scary thing to explore – but it is super important to do so if you want to live your happiest life as your best self!

Toxic Relationships

When I took the time to figure out what was causing the most harm to my self-esteem, I discovered that my toxic relationships were at the top of the list!

Although identifying this as a leading reason for your low self-esteem might not be a difficult process, actually working to resolve the negativity in these relationships – or walking away from them entirely – is not always so simple.

The chances are that if you have been dealing with toxic relationships for a long time that you are also probably not used to putting yourself first. However, this is something that you absolutely have to do if you are to rebuild your self-esteem and become more optimistic.

Resolving Negativity

Attempting to resolve negativity in your toxic relationships can sometimes be achieved through open and honest communication. Express your unhappiness to the person in question, let them know how their behaviour makes you feel, and express what your boundaries and needs are. If this person can’t understand or respect what you are asking of them, then it might be time to walk away from this relationship.

Self-Care Sunday – Digital Detox

The latest topic in my Self-Care Sunday series is that of learning to digitally detox! This is something that is becoming increasingly necessary in the age of social media domination in which we live.

Studies have shown that the average digital device user can check theirs as many as 85 times a day. This can often add up to an unbelievable daily amount of five hours! Often we use our devices for short bursts of time, such as sending a message, making a phone call or searching for information. However, many people also often spend extended periods of time browsing the internet on their devices, playing online games, and engaging in other digital activities. Although this can sometimes seem relaxing, we are really increasing our dependence on our devices and paying less attention to our real life relationships, pursuits and responsibilities. 

There are many reasons why it may be super necessary for you to go on an extended digital  detox, but also it is something that you can do regularly for short periods of time. Leaving your devices alone for a whole day is a great way to disconnect and get your time back, but you can also try scheduling periods during the day where you go without them. This could be 30 minutes, an hour, two hours or maybe more…the point is that you are disconnecting from technology and focusing your time and attention on other things. 

In the following video I share a tried and tested method for encouraging yourself and those around you to detox regularly from digital devices. You can do the activity that I discuss at home when you are with your family, and also when you are out with friends or co-workers.

How to Rebuild Your Confidence

There are many reasons why your confidence and your self-esteem may have been negatively affected. It may have been the result of several small incidents, or perhaps even one ongoing situation. Regardless of the reason for your low confidence, the effects that it can have on your life can be difficult to overcome.

When you don’t believe in yourself or in your abilities, it can be tricky to motivate and encourage yourself to do the things that you truly want to do. It can seem impossible to actually give yourself the push you need to work towards your goals and ambitions.

So, how can you overcome this issue with your confidence and self esteem in order to lead a more fulfilling and ambitious life?

Taking care of your own needs is the first step, and in doing this you will be moving self-care to the top of your list of priorities! Self-care can take many forms, and essentially means you are recognising your own needs and taking productive and active steps to meet these needs.

I would encourage you to make a physical list of the things that make you happy, such as exercise, socialising, travelling, listening to music etc, and then ask yourself how often you actually do these things. I would then ask you to commit to finding the time to do these things often, and you can then notice how your perception of yourself changes and your confidence grows.

Next, try to establish what your negative views of yourself are – by this I mean the reasons for your low confidence levels. Do you perhaps think that you are not doing great at your job? Or, do you believe you aren’t taking care of your family well enough? Perhaps you don’t like the way that you look and would like to change your appearance in some way?

All of these negative views about yourself will have their roots in fear – a fear of change, a fear of failure, a fear of being judged. Whatever your fears are, it is important to recognise that these fears come from within you, and therefore you have the power to silence these thoughts and to kick them out of your mind!

Combatting negativity with positivity is key to a happy life, full of confidence. And, we all have the potential to enhance the positivity within us so that less and less space exists to allow the negativity in!

How to Make Time for Yourself

Wishing for extra hours in the day is certainly not a new concept and many of us are often left wondering where the time goes! With such busy schedules and such limited time to fit it all in, the idea of finding additional time for yourself may often seem laughable, and even verging on impossible! 

There is certainly nothing wrong with being organised, but if it seems like every moment of your life is scheduled and accounted for, then you may actually be doing more harm than good. If this sounds like you, then taking a step back, and giving yourself permission to just be, could be the best decision you can make.

Starting The Day

A lot of discussions around being more time efficient centre around the morning routine. How you start your day is often seen as a benchmark as to how successful the rest of your day will be. However, putting too much emphasis on the first few hours of the day can actually cause unnecessary stress that you then take with you into the rest of the day.

The way in which you find it best to start the day is of course individual to you! If you feel inspired to meditate, do yoga or cook a healthy breakfast for yourself from scratch, then certainly you can benefit from these things, but don’t beat yourself up if you do not feel motivated to do so!

Trying to cram too much into the beginning of the day can leave you feeling overwhelmed and then less able to make time for yourself during the remainder of the day!

Re-evaluate Your Routine

You may find that having a routine helps you to commit to doing the things that you need to do. However, it is important to take into consideration that no two days are ever going to be the same. It is often impossible to predict what your life and your mind will have in store for you. By this I mean, events may occur that throw your schedule off, and that your mood can fluctuate from one day to the next, making certain things seem harder to accomplish.

For these reasons, it is important not to overload your days with scheduled activities and commitments. Of course there are going to be things that you need to do, but there is no harm in spreading these activities out, and in doing so you will naturally create a larger amount of time for yourself within each individual day.

Understand Your Importance

Making time for yourself is a super simple but seriously underrated form of self-care! If you are someone who spends a great deal of time caring for others then you may have forgotten how important your own health, happiness and time is!

Learning From Last Year

Learning from past mistakes is something that does not come easily to everyone. Falling into patterns of negative choices can be second nature to many, and it can take a great effort to break this routine of cyclic behaviour. 

If you feel like 2016 was not a good year for you in terms of the choices that you made and the decisions that you regret, then 2017 can be the perfect opportunity to turn this negativity into something productive. Instead of dwelling on the consequences of these choices, see them as lessons learnt and a basis for self-discovery moving forwards. 

Mistakes are an inevitable part of the human experience, and something that absolutely everyone makes. Sometimes it may seem that you make more poor choices than those around you, however, you have to remember that not everyone is open and honest about the things in their life that they regret.

There is also much to be learnt from the good things that happened to you in 2016. Maybe you discovered a new hobby, made new friends or embarked upon a new career. When you invite something new into your life it helps you to understand more about yourself. It might show you that you have a skill or a talent that you were previously unaware of, or that you are seeking certain things in life.

The people that we choose to spend our time with will help to mould us and guide us through our own lives. This is why it is important that you surround yourself with positive, encouraging people who will nurture you emotionally. Making new friends, or starting new romantic relationships, can teach us a great deal about the love and kindness that we deserve – as well as about the abundance of our own emotional energy that we are willing to share and invest in others. Try to process any negative interactions you had with people last year and to understand the reasons for them. You can then release these experiences from your mind and have no restrictions as to how open you are to new connections this year.
