So, I know that sweet potato chips are the new chip craze but today I want to show you just how simple and how delicious polenta chips can be!

Polenta contains trace amounts of several vitamins and minerals, such as calcium, magnesium, iron, zinc, and vitamins A, B and E. Polenta is fairly low in calories whilst packing an exciting punch of dietary fibre and protein.
If you are making your polenta from scratch then I would definitely suggest using a vegetable stock to do so instead of just plain water. When you do this you are going to be making it more flavoursome. Thanks to the booming popularity of polenta these days you can actually buy it pre-made, so you don’t have to worry about making it from scratch – unless you want to!
- 1 pack of pre-made polenta
- Fresh rosemary
- Cayenne Pepper
- Black pepper
- Olive oil
Line a baking tray with aluminium foil and pre-heat your oven to 180C / 375F.
Take your pack of pre-made polenta and cut it into thick chunks. Once you have done this, take each chunk and slice it in half. You can then line your polenta chips up on the baking tray and drizzle some olive oil over the top.
Sprinkle some salt and black pepper over the chips and if you like it a little bit spicy then you can get that cayenne pepper on there too. The final ingredient to add is the fresh rosemary. Simply place a few sprigs of this aromatic herb on top of the chips and you’re good to go!
You can now place your tray of polenta chips in the oven and bake until they are golden brown. This should take approximately 20 minutes.
Once your polenta chips are a delicious golden brown you can remove them from the oven and enjoy!
