Use Your Mind to Create The Future You Want

The idea that the thoughts you frequently experience in your mind mould your experience in life is a one that is often contemplated. Can we really imagine the existence that we want into reality simply through positive thinking? It may sound far-fetched for some, but there are a growing number of people who advocate this way of improving your life.

Far from being able to magically manifest the life you want by spending a few moments picturing it in your mind, this takes a great deal of commitment and dedication. It is not enough to simply dream of the life you want and expect it to appear. You must make a conscious effort to bring these things out of your mind and into your life.

Using mental imagery and positive thinking to instigate change and work towards your ambitions can be extremely rewarding. But, how does it work?

First of all, in order for this to be a success you will need to be completely honest with yourself about the things that you want in your life. Contemplate where you are in currently in the grand scheme of things and where you would like to be in the next few years. When you have a clear idea of what it is eactly that you want, you will be better equipped to work towards it.

Secondly, remember that visualising your future and fantasising about unrealistic dreams are two different things. If you try to imagine a future for yourself that you know is completely out of reach, then you are likely to be disappointed in the long run. That’s not to say that you shouldn’t aim high! Simply that you should be sensible in your desires and your future goals for yourself.

Finally, be fearless and don’t listen to the negativity of other people. We all know that change is scary but it is a necessary part of evolving as a person. If we all stayed still forever then we would have extremely boring and unfulfilling lives. We have to step outside of our comfort zones in order to live the lives we truly want. So, if you picture yourself moving to a different country or quitting your job to follow your passion, then be sure to turn these thoughts into actions. When you make a huge change like this it is inevitable that certain people around you will have a negative attitude about it. Don’t let them project their own fears onto you and simply let them know that you are making positive changes for the better.

Make sure to always take the time to check in with yourself about the progress you are making. Self-reflection is a powerful tool and when you combine it with visualisation and positive thinking techniques then there is no telling how far you can go!

Green Goddess Soup

If you have made my Green Goddess Salad Bowl before then you will know how delicious and nutritious dishes with the Green Goddess label are! This soup is absolutely bursting with flavour thanks to the amazing ingredients it is created with.

Purple sprouting broccoli is great to use in cooking and is in season in the UK from January to May. When you select yours, make sure it is fresh and firm, as opposed to being dried out, as this makes for the best taste! Broccoli is thought to help prevent cancer, lower blood pressure and help to protect against cardiovascular disease – with several studies to support these ideas! Broccoli is especially high in vitamins A and C as well as folate, fibre and calcium!

To make a big batch of this soup, you will need the following ingredients:

1 litre of veggie stock
200g of silken tofu
250g of purple sprouting broccoli
2 good handfuls of Swiss chard and kale
1 heaped Tbsp. of white miso
Sea salt and pepper to taste
A large handful of pumpkin seeds, toasted

IMG_4796To get started, bring the veggie stock to the boil and then add in the broccoli.  You can boil the broccoli in the stock for five to seven minutes until the broccoli becomes soft. At this point you can lower the heat to a gentle simmer.

Once the stock is simmering, add in the tofu, Swiss chard, kale and white miso. Continue to simmer for another ten minutes and season with the pepper and sea salt. The next step is to either transfer the contents of the pan into your high speed blender, or simply use a hand blender to puree in the pan. You can then pre-heat your grill, place the pumpkin seeds on the top tray and toast for five to seven minutes. Finally, spoon the green soup into four bowls and sprinkle with the pumpkin seeds. Also, if you like, you can add the red colourful stems of the chard as a garnish too!

How to Follow Your Path of Passion

Living the life you want is much easier said than done and there are several things, both external and internal, which can prevent you from doing so. Fear of the unknown is one of the biggest things that can hold you back when you are trying to follow your passion to find happiness. Even though it can be difficult, there are certain things that you can work towards and certain concepts that you can embrace to make this process much easier.

First of all, always try to listen to the feelings in your heart instead of the concerns in your mind. From the day you are born you are constricted by rules of what you are allowed to do and expectations of what you should be. It is essential to remember that these are put upon you by other people and are not necessarily the things you want for yourself. These rules and expectations can be applied to literally every aspect of your life, from how you should behave to how you should look and the milestones that you should achieve in life. There is no one right way to live your life and living it the way you want will inevitably bring you endless happiness.

Secondly, knowing what you want is the first step towards getting what you want. If you are not sure what your passion is yet then don’t stress about discovering it and following it. Through self-reflection and with the natural progression of time your path will become clear and you can then begin your journey towards it. It is not important to have your passion or passions set in stone and it is completely normal for your feelings to change along the way. This is not indecisiveness, it is the natural occurrence of growth and self-discovery.

Finally, know that fear is a feeling that we all have inside of us and it can surface at any time. The important thing is not to let this fear take over you and to find ways to bring peace and positivity back into your life. At the very essence, our negative emotions actually exist to help us. We fear things that might harm us and we are anxious of situations that may breed deeper negativity. When you accept that these feelings manifest as part of the greater struggle to become a happy person full of passion, then you can use them to your advantage on your journey through life.

Adopting these basic principles into your consciousness will help you to see the life-affirming lesson in every single experience. Even situations which you may consider too damaging to recover from will eventually just become distant memories. These memories may never go away completely but the negative feelings associated with them will, and you will then be better equipped emotionally to deal with similar situations in the future!

Life lived without following your passion is not the true life that you were put on this earth to live. You are entitled to your happiness and you must take it upon yourself to discover it!

Cheesy Polenta and Sweet Roasted Butter Beans with a Beetroot Sauce

This dish is a great choice for those who enjoy a cheesy aroma in their cooking without actually having to use any dairy products! It is quick to prepare and can be beautifully presented, which is great for when you have guests over. Apart from the polenta, you will more than likely have all of the ingredients in your kitchen already, meaning it is minimal effort to give it a try!

One of the great perks of following a plant-based diet is having such a fantastic range of foods available to experiment with. Polenta is one such food that you might not be too familiar with if you are new to this way of eating. This yellow delight is made from cornmeal and, although it originated in Italy, is enjoyed all around the world. It is relatively easy to cook and contains iron, calcium, zinc and magnesium, as well as a selection of vitamins. If you are trying to eradicate carb heavy foods, such as bread and pasta, from your diet then polenta can help to satiate your hunger and prevent cravings for these foods.

The following ingredients will make enough to serve four people:

2 cups / 320g quick polenta
1 veggie stock cube
2 Tbsp of nutritional yeast
400g of butter beans, rinsed and drained
3 tsp of sweet paprika
4 pre-cooked beets
2 Tbsp of olive oil + excess for drizzling
2 Tbsp of apple cider vinegar
250g of tenderstem broccoli

To get started you will first need to preheat your grill to a medium-high heat. You can then make the polenta according to the packet instructions – but be sure to mix in the veggie stock cube with the water that you use to do so. Once the polenta is cooked you must mix in the nutritional yeast and put it to one side. The next step is to spread the butter beans onto a baking tray and drizzle them with olive oil. You should also sprinkle two teaspoons of the sweet paprika on top.

Next, grill the butter beans in your pre-heated oven for five to seven minutes, or until they become brown and crunchy. While the butter beans are roasting, add the broccoli to a pot of water and boil for three minutes before you drain and rinse. The next step is to place the beetroot, two tablespoons of olive oil, apple cider vinegar and one teaspoon of sweet paprika into your food processor. Blend these ingredients until they become smooth. Finally, to assemble, place a good sized scoop of polenta onto each of your four plates and top with the beetroot sauce, butter beans and broccoli before you serve!

The Path to Happiness

In our modern day world you would be forgiven for thinking that it is impossible to be truly happy if you don’t have a continuos source of pleasure in your life. It has become a common misconception that true happiness can only be derived from pleasure, whereas in reality the two do not always have to be connected. In order to understand why this is true, it is helpful to look back on ancient perspectives of happiness and how people through the ages have attempted to interpret its meaning.

The idea that the mind is completely responsible for happiness is one that has been explored extensively. The essence of this concept is that perception is everything and by finding ways to believe that happiness surrounds you will in turn breed feelings of persistent happiness. In order to achieve this it is essential to find ways to have a positive response to every situation and experience that you encounter. This can of course be a difficult rule to live by as the majority of us can never have complete control over all of our emotions! So, for those of us who can’t, I’ve put together the following list of simple concepts that can help us to strive towards a place of peace positivity.

First of all, I encourage you to accept the fact that happiness is not something that will appear overnight. It is a journey that we take which requires our attention and effort. Don’t see happiness as something that you are entitled to, but rather something which you earn through your behaviour and treatment of others. As you spread happiness, it will come back to you. Be grateful for the happiness that others extend to you and show appreciation for those who do so.

Secondly, work to adjust your perceptions of the things that happen in your life. Allowing yourself to have your mood dragged down by negative events beyond your control plays straight into the hands of sadness. Try to see light in every dark situation and understand that with every setback you are growing as a person. Your character is dependant on the way you conduct yourself in the world and refusing to let negativity in will go a long way to aiding you on your journey to happiness.

Finally, spend some time contemplating the things that are important to you and the things that you believe to be true in terms of a basic belief system. Do you want to eradicate cruelty from all aspects of your life? Do you want to be moral and virtuous in all of your interactions? Do you want to be kind and thoughtful to everyone you encounter? Once you know how you want to live, it will be much easier to implement this lifestyle. It isn’t until you truly do so that you will be able to reap the happiness that doing so brings!

Lemon Coconut and Radish Noodle Salad

This dish is fantastic if you want a light and refreshing yet filling meal that is full of flavour! It doesn’t take long to make and is a great excuse for getting your spiralizer out! I often make it as an accompaniment when I’m having people over for dinner but it also works as a main dish.

Radishes are incredibly under-appreciated when it comes to cooking and making an effort to eat them more brings variety to your meals as well as nutrition to your body! They have a crunchy texture and are actually naturally cooling which helps to keep your body temperature steady. In just a few months radishes will be in season, making them the perfect choice to include in spring dinner party dishes. If you are suffering with a sore throat or are experiencing poor digestion then radishes can help to improve both of these things! They are also very useful at preventing viral infections because of their high vitamin C content. Add to that, that they work to eliminate toxins in the body, as well as protecting against certain cancers, and you have an all-round amazing vegetable!

The following ingredients will serve two people as a main dish or four people as a side:

2 x watermelon radishes
1 small cauliflower
Zest of 1 lemon
A large handful of desiccated coconut

For the dressing:

Juice of 1 lemon
1 ripe avocado
2 Tbsp. apple cider vinegar
2 Tbsp. olive oil
A small handful of coriander
A dash of sea salt and pepper

IMG_4347The first thing you will need to do is peel the watermelon radishes and use a spiralizer to turn them into spaghetti noodles. Once complete, place the noodles in a large salad bowl. You must then chop the cauliflower into small florets and place in your food processor. Next, pulse the cauliflower until it looks like white rice and add it to the salad bowl. 

You can then sprinkle the radish noodles and cauliflower rice with the desiccated coconut. Next, in a small bowl, mash the avocado and add the lemon juice, apple cider vinegar, olive oil and torn coriander.  This can then be seasoned with sea salt and pepper. The final step is to mix the dressing into the noodle salad and garnish with the lemon zest. Delicious!
