Rhubarb, ApriSquash & Quinoa Stew

R-H-U-B-A-R-B!  It’s in Season!!!!  And it doesn’t have to be put in every single pudding or cake.  Yes, rhubarb can be used in main meals too.  Hurray!  My lovely mother-in-law brought me a huge stash of the rhubarb from her kitchen garden in Dorset and after much contemplating of what to do with it….. this recipe was born.  It’s easy, yummy and super fun to cook.  I say, this weekend, give it a go!

I’m all about simplicity, so even though this recipe might ‘look’ complicated, I promise you, it’s not.  Here’s what y’all will need!

2 Tbsp. coconut oil

1 Tbsp. cumin seeds

1 Tbsp. cardamom pods

1 large onion, diced

3 garlic cloves, crushed

2 inch piece of fresh ginger, grated

800g butternut squash, cut into 1-inch cubes

5 sticks of rhubarb, sliced

15-20 dried apricots

200g quinoa

3 Tbsp. raw honey

handful of flat leaf parsley, to garnish

ImageStart by heating the coconut oil in a large pan.  Grind the spices in your mortar and pestle to release the fragrance and add to the melted oil, stir for about 5 minutes.  The smell will be divine!  Add the onion, garlic and ginger and blend in to the spices for about 2 minutes.  Add the rhubarb, butternut squash and apricots and again, blend well with the spice mixture.  Next, add the quinoa and 900 ml of water, cover and simmer for 25 minutes or until the quinoa is cooked and the squash is soft.  Season with sea salt and black pepper and stir in the honey.  Serve with an awesome handful of some delicious parsley!

We all know that rhubarb is great for puddings/desserts/cakes and more.  But what if I were to tell you that it also an amazing nutritional addition to your diet!  It’s often thought of as a fruit, but guess what… it’s a vegetable!  This “plant” contains a fair amount of potassiumvitamin CVitamin Adietary fibre, and calcium.  There are also claims of additional health benefits, such as anti-cancer properties, aiding indigestion, lowering blood pressure, diminishing hot flashes, lowering cholesterol, and reports of anti-oxidant, anti-inflammatory, and anti-allergy properties.  So dig in!

Healthy Hot Chocolate

So, some of you may have seen this before but, if like me you’re enduring the miserable weather in London, you’ll be happy to see it again!

A gorgeous cup of hot chocolate is an indulgence that most of us love to partake in. Whether it’s first thing in the morning, after a meal or before bed, hot chocolate is always something to look forward to. However, regardless of how delicious it may be, many hot chocolate products can be full of sugar, calories and saturated fat. For all of you who love this drink but aren’t so keen on the often poor nutrition involved, I have created this recipe for healthy plant based hot chocolate!

1500 ml of plant based milk. Almond is perfect!
8 tsp of raw cacao (120 grams)
20 tsp of coconut palm sugar (300 grams)
1 tsp of lucuma
1 tsp of blueberry powder
1/2 a cinnamon stick
Goji berries as your marshmallows

healthy hot chocolate grassrootsandgrains2So all you have to do is heat your chosen milk whilst whisking in the raw cacao, coconut palm sugar, lucuma and blueberry powder. Once everything is combined and heated then you can add the cinnamon stick and leave to simmer for five minutes.

healthy hot chocolate grassrootsandgrains3Next, simply pour into as many mugs as you require and top with the goji berries and wait for them to go soft before you enjoy!

Goji berries are an amazing addition to your diet and have many great health benefits. Native to China, goji berries have long been used to treat some common problems such as high blood pressure and diabetes. As the goji berry is full of powerful antioxidants it is good for your bodies process of eradicating free radicals and encouraging positive health. Although it has never been proven, many people believe that a diet rich in antioxidants may slow the ageing process. It has also been suggested that goji berries have the potential to improve brain health which could prevent diseases which are age related like Alzheimer’s.

healthy hot chocolate grassrootsandgrains5The use of lucuma powder in this healthy hot chocolate is in place of the normal sweeteners you might expect in such a treat. Lucuma powder is made from the lucuma fruit which is native to Peru. It makes such a great alternative to other sweeteners as it is low on the glycemic index and also contains many nutrients such as beta-carotene, vitamin B3, zinc and iron, it is also rich in calcium and protein.

By just including a little bit in your diet each day you will be lowering your cholesterol, regulating your blood sugar levels, boosting brain health and even protecting against some cancers! It is also proven to be a natural food preservative thanks to its anti-bacterial properties!

Cauliflower, Sultana & Almond Salad with Turmeric Dressing

As crazy as this dish sounds, it is frickin’ unreal – like SO good!  So, I urge you to try it as soon as possible!  And the great news is that this dressing can be used to top a load of steamed or roasted veg as well.   I did an earlier post on turmeric called Turmeric is the New Kale!  So, check that one out to  read about all the amazing benefits of turmeric.  However,  I wanted to post just a quick blip on some of the benefits of turmeric anyhoo….. So check this list out below.

Turmeric is SHAMAZING because…..

  1. It is a natural antiseptic and antibacterial agent, useful in disinfecting cuts and burns.
  2. Reduces the risk of childhood leukemia.
  3. It’s a natural liver detoxifier.
  4. Turmeric may prevent and slow the progression of Alzheimer’s disease by removing amyloyd plaque buildup in the brain.
  5. It may prevent metastases from occurring in many different forms of cancer.
  6. It is a potent natural anti-inflammatory that works as well as many anti-inflammatory drugs but without the side effects.

P1080799But the reason I combined this turmeric dressing with cauliflower is this….When combined with cauliflower, it has shown to prevent prostate cancer and stop the growth of existing prostate cancer.  So there you have it guys, let’s go and make this salad!

Grab these ingredients which I bet most of which you probably already have in your kitchen!

For the Salad:

1 Cauliflower, broken into small florets

2 small red onion, sliced

1/2 cup sultanas

1/2 cup toasted, shaved almonds

large handful of chopped coriander

For the Dressing:

4 Tbsp. apple cider vinegar

Juice and zest of 2 lemons

1 clove garlic, crushed

1/4 large avocado

1 Tbsp. turmeric

1 Tbsp. raw honey

pinch himalayan sea salt

Heat your oven to 180C.  Toss the cauliflower florets with coconut oil -really rub it into them.  Season with black pepper and sea salt and roast for 15 minutes.  After the 15 minutes, add in the sliced red onion and cook for another 15-20 minutes until nice and tender.  Once cooked, you can add the cauliflower and red onion mix to a bowl and toast the flaked almonds in the same heated oven for max. 5 min.  Watch them carefully so that you don’t burn them.  Combine the almonds, sultanas and chopped coriander to the cauliflower and red onion mix.

For the dressing, combine all the yummy ingredients into your food processor or blender and blitz away until you get this amazing bright orange looking dressing.  It’s wonderful to look at and to taste!  Coat the cauliflower salad with this dressing and you are good to go.  This salad could be one of my all time favourites!  Enjoy!

Courgetti Spaghetti with Sundried Tomato & Almond Sauce

My good friend Russell James, the Raw Chef, is KING in the RAW arena.  I’ve pretty much tried all of his recipes, bought his amazing e-books, and think he’s one cool dude.  So, this recipe is dedicated to him and his awesome RAW recipes!  To find out more about Russell, head to:  www.therawchef.com and find even more amazing RAW recipes!

Before I get into the way to prepare this awesome recipe, I thought it best to explain why RAW is so important in our diets.

Now that summer is nearly here, we are more likely to eat raw food in summer because we are crave lighter, cooler dishes such as salads, juices, chilled soups and smoothies.   And that’s great as raw fruit and vegetables deliver far higher levels of nutrients to our body than cooked food.  I always try to have ONE RAW DAY.

One day of the week; immerse yourself into raw foods – it’s awesome!  Go to the your local store and buy a huge amount of organic fruits and vegetables. Having one 100% raw day per week can give your body a rest and let it heal and rebuild. And now onto the recipe!  It’s easy peasy, lemon, squeezy.  My 14-year old even said so as she helped me make and then we ate it!

Okay, one more thing.. if you don’t have a spiralizer… it’s okay!  Although they are very inexpensive so if you think you’re going to do more recipes like this, definitely invest in one!  You can then use a mandolin or julienne slicer instead of a spiralizer.

For the Courgette Spaghetti:  2 green courgettes or in America, we say zucchini 🙂

For the Sundried Tomato & Almond Sauce:

1 cup sundried tomatoes, soaked

1/2 cup almonds, soaked for 4- 6 hours

zest and juice of one lemon

1 garlic clove

1 Tbsp. olive oil

sea salt and fresh pepper

Marinated Red Peppers

1 red pepper, sliced

50 ml apple cider vinegar

50 ml tamari

Red peppers, red peppers, red peppers, where for art thou red peppers?  Remember, I was Captain of my Cheerleading squad in High School so my brain is all about poems, rhymes and cheers.  Well, red peppers are an awesome ‘super’ food.  A quick summary: All peppers are rich in vitamins A & C, and K, but red peppers are simply bursting with them. Vitamins A and C, awesome antioxidants, help to prevent cell damage, cancer, and disease related to ageing (am all over that one!) , and they support our immune system. They also reduce inflammation like that found in arthritis. Vitamin K promotes proper blood clotting, strengthens bones, and helps protect cells from free radical damage.  There’s LOADS more information on what Red Peppers can do for you health wise, but if you’ve been reading my blog for a while, I try to keep it simple so that you can remember snippets here and there rather than slamming you with a War & Peace novel of information. 

So, slice your red pepper and marinate it with the tamari and the apple cider vinegar.  Cover your peppers and set aside in the fridge to allow the tamari and the apple cider to absorb in the red peppers.

Next, get your spiralizer… so fun!  But don’t worry , you can still have fun without one and use a mandolin or julienne slicer instead.  You’re aim is to create spaghetti or taglietelle like strips out of the courgettes.  If you think you’ll use this recipe again and again, then spiralizers are actually very inexpensive to buy.  Put your strips into a bowl to have ready for the sauce.

Now put all of the Sauce ingredients into your blender  and whizz away.  You should get a paste-like sauce, but if that’s too thick for you add just a bit more water to thin it out.

Pour the sauce over your Courgetti, mix well and top with your marinated red peppers!  If my 14 year-old raved about this and ate it all up, then I hope you will too!  If you like this, then why not LIKE my Facebook page too!

Kaleberry Ice Cream

This is great way to get your kids to eat a dairy free, sugar free ice cream that even has a dark, green leafy vegetable in it – which they can’t see.  Genius, right? Yes, some times parents have to think of clever ways to get these greens into our kids diets.  Well, I can tell you – this one works!  Last night, all 4 kids happily consumed this ice-cream and my greedy guts 6-year old even had seconds!  It take NO time to whizz together.  So, next time your kids ask for ice cream, how about trying this one instead!  Warning:  This does not contain SUGAR!

Grab yourself these nutritious bits:
1 cup coconut milk; I prefer the brand ‘koko’ – yum.
Pop in 2 bananas in your freezer to make sure they’re nice and frozen before blending.
A super large handful of Kale (or even 2 super large handfuls if you prefer!)
2 pitted dates (love the medjool ones)
1 cup frozen blueberries
1 tsp. vanilla extract
pinch of himalayan sea salt
3-4 small ice cubes

Put all the ingredients in a high-speed blender, Vitamix is a great one – and watch how quickly (about 30 seconds) your ingredients morph into a delicious and incredibly nutrient-dense ice cream!  Top with some mint and you are good to go!

Blueberries are SHAMAZING!  They are always ranked as having one of the highest antioxidant capacities among all fruits, vegetables, spices and seasonings. Antioxidants are essential to optimizing health by helping to combat the free radicals that can damage cellular structures as well as DNA. So, I am in with a grin with the blueberries!  To change it up, go ahead and strawberries or raspberries or even blackberries or why not a big mixture of those amazing dark berries.
